You have to be lucky if you can choose a piece without cartilage.
Fine bacon for cooking, or I steam it and put it on the sauerkraut or dried beans for the last half hour.
Too much fat, almost no meat
I always buy the cooked bacon in one piece and when it's on sale. As I have a vacuum sealer, I can keep it for weeks and use it in many different ways: As bacon cubes or strips, cut into slices, for beans and bacon, tarte flambée, quiche lorraine, etc.
