For this reason, contamination with bacteria of the species Escherichia (E.) coli can occur. These are part of the normal intestinal flora in humans and animals. In rare cases, these bacteria can produce a toxin - shiga toxin. These are pathogenic types of bacteria that can cause acute intestinal inflammation. The grain undergoes extensive treatment before being processed in the mills, but contamination cannot be completely prevented. For this reason, the information on the packaging is a precautionary measure that flour and flour products (e.g. dough) should not be eaten raw.
