An increasing number of people are giving up dairy products for health or ethical reasons. There are now individual foreign chocolate manufacturers who - apart from dairy-free, dark chocolate varieties - offer "milk chocolate" based on rice milk and other plant-based milks.
My family and I wonder why (as far as we know) no Swiss chocolate producer has yet considered such a project? We ourselves and various people in our circle of friends would like to have a fine, creamy milk chocolate without animal ingredients. My own kitchen experience shows that this is easily possible.
My pralines contain soy cream and margarine, making them delicately creamy and very popular - and not just among people who don't eat animal products. Dozens of variations are possible with this or a similar basic recipe.
Can we one day hope for a fine Swiss "milk" chocolate without cow's milk, but just as creamy? Surely this should be possible, especially in Switzerland, the land of chocolate, with probably the greatest know-how in chocolate production?
