Hello, I bought a Taleggio cheese for the first time yesterday. Unpacked it today and the cheese has green/grey mold spots on the rind. Is that how it should be? And partly wrapped in aluminum foil?

Hello famkoch, I have just received feedback for you. Slight mold growth on the rind is always possible with organic Taleggio. This is because the cheese is not packed airtight and the aerobic (air-loving) bacteria can multiply in places where air is added. These bacteria are never found in the cheese because anaerobic conditions prevail there. You can cut away the mold and enjoy the rest of the cheese safely. Kind regards, Luisa
