I would be happy to pass on your thoughts to the takeaway managers. They know how the prices are made up and can certainly say whether something can be done about it.
I am of course aware that eating out/take-away is more expensive than buying the ingredients in a store and cooking them yourself (ingredients, staff, effort, rent, etc.).
My train of thought is that the price structure in the same category (e.g. take-away) must be fair and comprehensible. In other words, if ingredients for a menu should be cheaper (i.e. for "vegetables only") than for more expensive purchase costs (i.e. for "vegetable casserole").

The product manager explained to me that the offer can sometimes vary greatly during the day (depending on availability). That's why the takeaway has agreed on a price for vegetable offers. This price can vary from region to region.

I don't think that answers your question directly, but it does offer an alternative: I always order the fitness plate at the Migro restaurant. You can take as much salad from the buffet as you like (no meat/fish) and then you get a fine meat (usually turkey schnitzel) and chrütterbutter on top - the whole thing costs around 15 cents.
The buffet varies constantly and sometimes they even offer wakame salad. It's really expensive and you can scoop as much as you like :D

I was just on the Coop site and discovered that there is the possibility to check which Cooprestaurant offers which menus, would be great if Migros made this possible, thanks?

Most cooperatives already publish their weekly restaurant menus and sometimes also the take-away offer. First select the region where you are eating out on this page:
Then select "Gastronomy" in the navigation bar on the right. From there you will be taken to an overview of our offer and can view the menu plans for restaurants.
I agree with your opinions about the salad. It's really too expensive, except on Tuesday when the salad buffet is CHF 12.50, no matter how much you add! It's worth it and tastes delicious!
However, I find the arrangement of the buffet in the Migros restaurant in Glatt, for example, rather cumbersome. The green salad is in the middle of the buffet (usually doesn't look very tasty) and the other salads are all around it. I would prefer to have the green salad at the beginning and garnish it with the other salads (would also make sense, purely from a health point of view).
