Why is coconut oil so healthy? Coconut oil has a very high proportion of saturated fatty acids, which doesn't really correspond to a healthy diet...

For me it is a good alternative (instead of butter) for baking and cooking as I cannot tolerate dairy products.
Coconut oil (NOT coconut fat!) is rich in medium-chain triglycerides. These are very well tolerated by the body and serve to better transport certain vitamins into the bloodstream.
In addition, medium-chain triglycerides are more ketogenic than other fats. This is very important in the context of an anabolic diet (or other nutritional therapies).

That saturated fat is harmful is an outdated misinterpretation by the food industry. Today, trans fatty acids are considered the 'bad guys'. You can google or youtube the exact information. Apart from the type of oil, you have to pay attention to how the oil is produced and how it is heated at home. Be sure to use cold-pressed coconut oil and not the cheaper hot-pressed oil.
