Palm oil gives the product its proven consistency and the usual spreadability. It serves as a vegetable fat source and contributes to the stability of the product. We make sure that we only use sustainably certified palm oil (RSPO standard).
The thickener is necessary to maintain the texture and stability of the butter. Otherwise, the low fat content would cause the food to separate into its individual components, resulting in an unpleasant mouthfeel.
As far as additives are concerned, we generally follow the principle of "as much as necessary, as little as possible". Legally, we are governed by the requirements of the federal government, which is responsible for the risk assessment and evaluation of additives. The Additives Ordinance regulates the permissibility of the various substances and lists areas of application and maximum quantities. Switzerland coordinates its decisions with the international authorities. Should the federal government adapt its recommendations on the use of additives (such as the thickening agent sodium alginate in Délice extra light), Migros will of course comply with them. According to the current assessment of the situation, it is not necessary to do without them.
Nevertheless, we are following the discussion about the use of additives closely. We are constantly working on making our recipes more natural and - wherever possible - reducing or completely eliminating additives. Examining alternatives also has to do with customers' general skepticism towards additives. However, adapting the recipe is not a simple matter and unfortunately does not happen overnight. If hydrogenated oil or fat is used in a product, this must be stated in the list of ingredients by law (e.g. "partially hydrogenated sunflower oil" or "hydrogenated rapeseed oil"). The reason for this is so-called trans fatty acids, which can be produced during the partial (i.e. incomplete) hardening of fats and oils. Similar to saturated fatty acids, they are considered unfavorable to health as they have a cholesterol-increasing effect. In this context, however, it must be said that modern hardening processes nowadays make it possible to achieve a low trans fatty acid content. In Switzerland, there is a legal requirement that the trans fatty acid content must not exceed 2% (in relation to the fat content).
