One question: Why is the Grano Padano at Migros so short dated, while that of the competition is usually dated 1 to 2 months (in June or July)?

Dear Migros, I would be interested to know whether this cheese was made with animal or microbial rennet. I didn't find it on the list of cheeses with microbial rennet, but it says above that the list is not necessarily complete.

The packaging is one thing,
the other,
when I looked at the various Grana Padano grated cheeses (whether Emmi, Coop or Migros) I unfortunately found that they all contain E 1105 from egg white,
you have to buy cheese in one piece and grate it yourself if you don't want any e-substances in it :(((

The E number has nothing to do with the maturing process of the cheese. This additive is used to prevent late bloating during the ripening process.
Use organic Parmigiano Reggiano, as it should not contain lysozyme.

The E-substanceE1105 (lysozyme) is a natural product extracted from eggs or bacteria. It is added during the production of all Grana Padano to prevent the growth of Clostridium tyrobutyricum.
This bacterium produces a gas at the start of milk fermentation. This causes a quality deviation that must be prevented.

As this cheese is (hopefully) made from milk, it automatically contains lactose.

There is nothing wrong with the taste of this cheese.
But any attempt by me to spread this product properly on the food has so far failed.
My idea would be for you to offer grated Parmesan in a sprinkling tin (like powdered sugar, for example). This packaging has already been introduced in the USA and has proved successful. As there are certainly enough people in Switzerland who don't own a Parmesan container, this would certainly be a good idea.

The taste is there, but the cheese sometimes starts to mould before the expiry date without even opening the packaging.
A quick question: what type of coagulant is used in the curdling of this cheese? Is it rennet (of animal origin), a vegetable coagulant or a microbial coagulant?
It would be nice if you could indicate this information for each cheese you market (either in the list of ingredients on the packaging, or at least on Migipedia).

Very often in Grana Padano, traces of blue-yellow color are mistaken for mold but, in most cases, these traces of color are the result of marking the wheels of Grana Padano with edible ink. These markings are specific to the PDO specifications and identify the cheese as Grana Padano.
The inks used are edible inks perfectly suited to human consumption. However, it is possible that our products may have suffered a leak due to internal or external transport, resulting in mold growth. We have already informed our staff of this possible deviation so that it does not happen again in the future. Grana Padano is made with animal rennet.

The opening is difficult to open when the pack is still closed. And once it is open, it no longer sticks. Why not sell it in a solid container? This could be placed directly on the table with a spoon for serving instead of putting the grated cheese in another container first, as is the case now.

Dear Migipedia team, take a look at the Grana Padano from Coop or Emi. The pieces of cheese are thicker, like little balls, tastes divine, it's one of the few products I don't buy in Migros. I don't expect you to change your range for me, but perhaps it would be possible to supplement your range? That would save me a trip to the Coop ;p
