I boil them briefly in a decoction of water/white wine to reduce the salt content and neutralize any undesirable substances. The taste of the tomatoes is good, but the quality of the tomatoes leaves a lot to be desired. I always cut out the stalks and the many rotten spots. When I see the poor quality tomatoes that are sometimes dried, I wonder if nobody looks at the tomatoes before use. I don't see anyone noticing any defects.
