What is the cooking time for cotechino?

Cotechino should be cooked 1 hour in non-boiling water (must be nice and hot but not boiling, 80°). Only pierce it at the end of cooking so that the juices do not escape during cooking, otherwise it turns out drier and less tasty. Your M-Infoline team
