Why does Migros have almost no margarine without palm oil?
Hello emduschu, palm oil is often used in industrial production, particularly as an ingredient in vegetable margarines. These often contain palm oil, as it has better properties in the manufacturing process than other vegetable fats such as coconut, sunflower or rapeseed oil. The so-called "healthier" oils, such as rapeseed oil or olive oil, are liquid at room temperature, whereas palm oil is solid at room temperature (and at refrigerator temperature) and therefore does not need to be hardened. By mixing palm oil with these other oils, for example, a spreadable margarine can be produced. Without a certain (low) proportion of saturated fatty acids, margarines would be liquid. This also applies to other fats that are used in the industrial production of products and must have a certain solidity for technological reasons. It is usually very difficult to find a suitable substitute for palm oil that is equivalent in terms of production technology and taste and meets ecological, social and health criteria. Why is skimmed milk powder in a plant-based magarine? And why does it cost 5 times as much?
Hello Donas, thank you for your question. As long as a margarine is not labeled as vegan/vegetarian, it can contain animal ingredients. The skimmed milk powder is included to improve the properties of the margarine and as a flavor component. This has been tried and tested over the years. Margarine is said to have a positive effect on cholesterol levels in the body. That is why it contains approx. 12 % plant sterol esters. The phytosterols it contains are responsible for positively influencing cholesterol levels. The plant sterol esters are also the reason why margarine is slightly more expensive.
