Dear Migros team, how come, for example, this plait or Ticino bread doesn't taste the same in all stores? Does every store with an in-house bakery have its own recipe? By the way, the best Migros plaited loaf in Switzerland can be found in the Glarus branch ;-) incredibly delicious...

Hello Migroskind83, thank you for your post. The recipe is the same everywhere. However, there may be slight differences, especially in home bakeries, because there is a person behind every process. Depending on the branch, the dough is left to rest a little longer, the ovens are different, there are slight variations in the dimensions of the raw materials or the raw materials come from different batches. Will there be a sweet version for Zopfs?

thank you for your question! There actually is a sweet plaited loaf alternative, the Meisterzopf. It is sold in all regions except in the Migros Cooperative stores Aare and Lucerne.

Thanks for your answer. I have tried out the suggested product, but it contains the same amount of salt and only slightly a little bit of more sugar, so the result is still a salty version of Zopf. If you accept suggestions, I would recommend to make test with a sweeter version, and if the customers like it, you would have a new kind of product by just slightly modifying the original Zopf :)

It's a shame that Migros has to put lactose in the plait. It has no place there and annoys those who suffer from lactose intolerance. This should be changed immediately, because the taste of the plait is first class.

Traditionally, a butter plait is made from a yeast dough with butter and milk. For technological reasons, skimmed milk lactose powder is mostly used instead of milk for the plaits produced by JOWA. One exception is the butter plaits, which are marketed under the CoR label "From the region. For the region." label. These use CoR whole milk and also CoR butter.

The lactose (0.3%) listed in the list of ingredients is not added, but is contained in the raw milk powder that is added.

As both butter and milk or skimmed milk powder obtained from it naturally contain milk sugar (lactose), butter braids are unsuitable for people who suffer from lactose intolerance.
