Hello Horowitz, it is generally difficult to determine shelf life for packaging that has already been opened. If handled hygienically - do not eat directly from the packaging, reseal the packaging quickly and keep it in the fridge throughout - organic sweet herbs will keep for approx. 3-5 days, often even longer. Rely on your senses and experience, do a smell and taste test and take a look at the color of the sweet potato (over time, the sweet potato takes on a darker color).
