I love mushrooms, but oyster mushrooms are the only ones that don't give me stomach ache.
Due to their low chitin content and favorable composition, they are particularly easy on the stomach and intestines and are therefore better tolerated by many people than other mushrooms. They also have a great texture, almost like veal.
However, they are sometimes moldy when purchased before the best-before date, so I'm deducting one star.
