Citrus fruits colour on the tree. To do this, they need both "cold" nights (approx. 10° C or less) and a temperature difference between day and night.
Our organic lemons currently come from Spain, where the temperature fluctuations between day and night are not so great as to fully develop the typical yellow color. In warmer regions, it can happen that lemons are still greenish even when ripe, as the temperatures are not sufficient to fully develop the typical yellow color.
