Why does this beer radish taste sweet after 5 days and no longer spicy hot?
Hi Michi2000, thanks for your post. The pungency comes from the glucosinolates it contains. The soil and climatic conditions are decisive for the degree of pungency. Cooking or using different fats and/or a lemon to flavor the product (even raw) reduces the perception of pungency. However, the beer radish probably already had a low content of glucosinolates beforehand. Best regards, your M-Infoline team
