Traces due to possible carry-over in the manufacturing process must be indicated at the end of the list of ingredients with a "may contain gluten" or "may contain traces of gluten". Meat products - charcuterie such as salami, ham etc. as well as sausages, cervelas etc. - generally do not contain any gluten-containing ingredients, and no carry-over is to be expected. In principle, it goes without saying that meat products do not contain any gluten ingredients! It is essential for people with coeliac disease to study the list of ingredients before buying/eating a product. When reading the list of ingredients, pay attention to whether the words wheat, spelt, rye, barley or oats appear.
