The beetroot tends to become harder during storage. We try to counteract this by cooking them soft. However, as not only the storage period but also the size of the beetroot and the nutrients vary due to the soil conditions, certain fluctuations are unavoidable, even within the same batch. Soon new beetroot will be available again, which in most cases will be slightly softer to the bite.
