The holes are not as big as in Emmentaler, but they didn't used to be in Appenzeller. Now the regulations allow holes, but the taste is not at all better as a result.

Hello H_Trickler, we were able to clarify with the supplier without the production data. Appenzeller portions can indeed contain small holes due to the release of gases during fermentation. Appenzeller has a typical taste that makes it special. This cheese has been produced according to the same traditional recipe for several hundred years. During the first three months, the cheese is treated several times with a herbal brine, the composition of which is kept secret. This preparation and the origin of the milk give it its character and characteristic aromas. My comment is not about Appenzeller Surchoix in particular, but about packaged cheese in general. I am single, almost 67 years old. I like to have Gschwellit with cheese, and I don't want 1 mock of 1 type of cheese with my 3 Härdöpfeln, but rather about 3 Schnäfeli of different types. When we still had a cheese stall in Dietikon, this was possible. Unfortunately, this is now a thing of the past and the giant mocks on offer are generally far too big for me. Please make sure that the packers also produce small pieces, even if it means a bit more work. Thank you very much.
