Why is the dough getting smaller and smaller?
It’s way too small now for an aperitif with guests! And two baking sheets with that little bit of dough is too much work—and way too many tarte flambées again!
This indirect price hike is outrageous! Do they really think we customers won’t notice? It can’t be because of the baking sheet, can it?

We fully understand your criticism. Especially on a special occasion or when you’re cooking for others, a product that doesn’t live up to expectations can be disappointing.
We are currently experiencing a technical issue on one of our production lines that is particularly noticeable with the thin tarte flambée dough. When the machine stops, the cutting roller may come to a halt with a slight misalignment, which can cause the first batch of dough after restarting to vary slightly.
Our employees manually sort out such doughs, and an automatic checkweigher removes any that are significantly too short or underweight.
Nevertheless, it can unfortunately happen in isolated cases that visually smaller dough pieces go unnoticed despite having the correct weight. We sincerely apologize for any inconvenience this may have caused you.

In my search for a gluten-free version, I came across leisi's tarte flambée, which has no ingredients listed on the migros website. Is there even a gluten-free version?

You will generally find the batch/lot number next to the best-before date. It usually begins with the letter L or a mixture of letters and numbers. Unfortunately, there is always a production error with this product, whereby the dough is piled up in an S-shape instead of a roll shape, causing dough to stick to dough. The dough can sometimes only be removed with damage. The last example was L4279 09:41. The dough size is also too small for two people and too large for one. It really wouldn't be a bad idea if the dough filled the size of a baking tray, which is standard in Switzerland.

We assume that the paper was not wrapped around the end of the dough when the dough was rolled up inside. For this reason, there was probably dough on top of dough. This can happen in individual cases and unfortunately cannot be completely ruled out. After rolling up, it is not always possible to see the faulty wrapping inside, which is why it is almost impossible to sort it out manually. With thin tarte flambée dough, the wrapping process is somewhat trickier than with slightly thicker puff pastry and cake dough.

Why do you need ethanol in tarte flambée dough?
Hello Chappell, the dough is sprayed with a very small amount of ethanol (alcohol) to preserve it. This evaporates almost completely when the dough is baked, so that there is no alcohol left in the finished baked product. Ethanol is a natural preservative.
