why can't I find alnatura corn flour in any store? has it been taken out of the range after all? if so, that would be a disaster!

This flour comes up first in a google search for "nixtamalized corn flour". However, there is no mention of nixtamalization on the packaging - IS it treated with this special process or not?

Hello Calypsoo, Alnatura corn flour (article number 104614600000) does not contain any gluten-containing ingredients and there is no risk of gluten being carried over. This can be recognized by the "gluten-free symbol" (crossed-out ear of corn) on the product. If a product contains gluten-containing ingredients, this must be openly declared, stating the gluten-containing cereals (wheat, spelt, rye, barley, etc.). Traces due to possible carry-over in the manufacturing process must be indicated at the end of the list of ingredients with a "may contain" note ("may contain gluten" or "may contain traces of gluten"). is this corn digestible ? or "authentic" south american ?http://www.lateinamerika-studien.at/content/geschichtepolitik/mais/mais-102.html masaharina or nixtamal has been used in south america for over 700 years, because otherwise corn is not digestible. >> pellagra. i am looking for healthy cornmeal that has been nixtamalized. do you offer this ? is this product nixtamalized or do you have tapas etc. made from masa harina ? thank you.

Hello beno, thank you for your inquiry. The maize for Alnatura maize flour is not nixtamalized. The maize is briefly treated with steam so that the skin comes off better. Then a corn semolina is first produced, from which the corn flour is then ground. However, we can tell you the following: The disease pellagra refers to a severe niacin deficiency, which usually occurs in combination with a protein deficiency. This serious illness occurs in very poor countries with a very unbalanced diet. In our latitudes, a deficiency is only to be expected under extreme deviations from the usual dietary habits (e.g. if one were to eat practically exclusively maize). Hello Sarah, thank you for your inquiry. Alnatura corn flour is not pre-cooked corn flour. Arepas are usually made with pre-cooked corn flour, which has different cooking and baking properties.
