Wash thoroughly. Soak or not. Cook slowly (steamer is useful); it should remain firm once cooked. Little or no seasoning (butter, parsley).
Vegetarian dishes; fine cuts of red meat; firm, whole fish (e.g. tuna).
Excellent when mixed with firm, long-grain Basmati or other good-quality rice (black: 1 third).
Cook for 45 minutes! Good bite and great taste.
Everything hinges on the preparation of this rice. Take the time to soak (overnight) so that the grains are not sticky. To each his own recipe. Good quality.
