Often, underneath vacuum-packed or tray-packed meat, there's a preservation sheet or mat. Are these sheets/pads soaked in any chemicals to help preserve the meat? If so, which ones?

It is therefore particularly important to us to alleviate your concern. This sheet or mat, as you describe it, is in fact an absorbent pad, also known as blotting paper, which is placed at the bottom of the tray to absorb any meat juices that may leak out, so that they don't spill into the tray.
