How about gluten- and dairy-free bread in the fresh bread section?
According to Google reviews and our own perception, the gluten-free pop-up sandwich counter "No Grain Zone" at the main station is running like clockwork and there is great demand for a permanent location with gluten-free fresh bread. Why not at Migros too?

i think the risk of contamination with cereals containing gluten would be too great - especially as the bread is baked in the migros itself. it would need an extra oven.

Well, there are now more and more people with gluten sensitivity and intolerance who do not have coeliac disease. Therefore, the information "may contain traces of gluten" would not be a problem...
