Hi cschaepper, I first tried the egg substitute for a glaze on simple wafers and it worked so far. But I also tried it with more or less liquid, depending on how moist the fruit is and what else goes into the icing, e.g. raisins or nuts, etc. The next thing to try will be omelettes. Unfortunately, I can't say any more yet.
I baked a cake with it once. I don't think it's as good as with egg, even if you only have to replace one egg. Less fluffy consistency and not exactly the same flavor as with egg :-(. So you can just as well use apple sauce and a little more baking powder.
