I would find it more practical if the florets were roughly the same size. In the last two bags I had some huge pieces. When I want to use the cauliflower to make a gratin, it's often like playing Tetris: Where else can I fit it? It's also a matter of cooking time. It's clear that it's a natural product, but you could cut up the large pieces again.
