That's right, my spices also sit around for a long time until they're used up, even though I cook a lot myself and always have to season ready meals (I like it a bit spicy and as an endurance athlete with low blood pressure, I also have to add more salt than the health experts always claim...). This gave me the idea to take a closer look at my spice collection. I found some expired spices (best before):

Whole cumin in a jar 30 g, still almost full: 08/2013
Ground nutmeg in a jar 33 g, half full: 03/2013
Thyme in a jar 15 g, almost full: 07/2015
Tarragon in a jar 12 g, small remainder: 02/2012
Organic sweet paprika in a jar 40 g, one quarter left: 03/2015
Herbs Provence in a jar 43 g, half full: 02/2014
Salad herbs in a jar 65 g, half full: 08/2012

Smaller jars would therefore make sense, but half the quantity would perhaps only cost 10% less, as the packaging is more expensive than the contents. And since spices keep almost forever if they are well sealed and protected from light, I don't worry too much about it. In any case, I've never had to throw anything away; at most, the flavor intensity diminishes over time, which in turn speeds up consumption. I even still use cornflour with an expiration date of 2003, as long as there are no critters nesting in it, no problem :)

I once heard that spices often mold invisibly because steam gets into the shakers when seasoning. Always put a few grains of rice in there. I hope this helps to bind the moisture. In any case, the contents stick together less.

I often use nutmeg and pepper and grind both fresh.

I occasionally distrust my paprika and replace it every few years.

When you see how many people throw away food (yogurt 1 day past the expiration date and things like that), I wonder what happens to all the spices! Eating out more often and the increase in convenience food is also causing spices to wither away.

Like moz79, I prefer to buy something new from time to time, so I would welcome small tins of spices.
