Erythritol is a sugar alcohol (or polyol) that is used as a food additive. It was discovered in 1848 by the British chemist John Stenhouse. It occurs naturally in some fruits and fermented foods.

Calorie value: 0.2 kilocalories / gram
No influence on blood sugar, glycemic value: 0
Can be used 1:1 for baking (volume is the same as sugar)
