The butter rösti from Bischofszell is very good. Nevertheless, I have to complain about an additive that, in my opinion, does not belong in food. It contains sodium metabisulphite. I am a very health-conscious consumer and do not want to voluntarily consume sulphur under any circumstances. This additive is extremely harmful to humans. That's why I find it questionable to mix this chemical additive into food at all. Roast should only consist of potatoes and NOTHING else! I hope that Migros will get this right. Organic roesti also contains a ton of sugar as a flavor enhancer; unfortunately!
(There should be ready-made products without any additives. That would be a great thing!)

The very fact that additives are intentionally added to food means that they must not endanger our health. This also applies to sulphur dioxide and sulphites! The additives currently approved by the World Health Organization (WHO) and the Federal Office of Public Health (FOPH) are harmless to health. They are among the best-studied substances in our food and are only approved once strict toxicological tests have proven their harmlessness.
Migros always follows the principle of "as much as necessary, as little as possible" when using additives.
Rösti is a product with a long shelf life. Storing this product for months can cause certain chemical reactions, which lead to changes in color and loss of flavor. Only the addition of antioxidants (including sodium metabisulphite) makes it possible to use a product of impeccable quality for months.
The sodium metabisulphite prevents browning reactions and has a stabilizing effect on vitamin C.
