Hello envyme, thank you for your contribution. Only very small quantities are used. For technological reasons, the use of sugar (types) cannot be dispensed with: in cured meat products, a small amount of sugar types (sucrose, glucose or lactose) is unfortunately essential, as these serve as a substrate for the starter cultures (curing flora). This process supports the reddening and protects the product from fading and graying due to oxygen and light. However, the sugar is fermented by the microorganisms into acids and thus "disappears". Hello Luisa Thank you for your answer, but what I still don't understand is why almost all products (whether sweet or savoury or "natural") contain sugar today? Pizza with sugar, grilled cheese with sugar, natural yoghurt with sugar... I could go on and on. And then they always talk about sugar reduction, but then other ingredients appear in the products, such as glucose, barley malt, milk powder, etc., which are also nothing other than sugar. This is extremely annoying and Migros (or the food industry in general) can't seriously tell me that sugar is essential in all these products!

Why, because people love sugar. Because when new products are launched, the version with sugar is always perceived as the best and is therefore chosen. And that's exactly why it's important to finally cut out sugar, so that people finally realize again what the product really tastes like. Otherwise, people are just on the retro track.....

Hello envyme, I would be happy to clarify this for you. It is difficult to give a general answer to this. According to food legislation, the term sugar or types of sugar includes all monosaccharides and disaccharides with the exception of polyhydric alcohols. Types of sugar include, for example, glucose, fructose, lactose, maltose and sucrose (= household sugar). Powdered milk is not sugar, powdered milk is milk from which water has been removed. Migros is aware of its responsibility with regard to food recipes and is constantly working on improving recipes in its own-brand range. We define various selected product ranges in which we aim to reduce sugar or salt, for example. For example, we have reduced the sugar content of many yogurts and the salt content of many soups. Further recipe adjustments are made on an ongoing basis. Our recipe improvements are based on nutritional guidelines developed in collaboration with the Zurich University of Applied Sciences (ZHAW) in Wädenswil. These guidelines take into account nutritional principles, such as the recommendations of the World Health Organization (WHO), on the one hand, and technological and sensory feasibility on the other. The Migros nutritional guidelines are scientifically based and assess not only a selected nutrient (such as sugar or salt), but the entire nutrient profile of a food with all the main nutrients (sugar, salt, fat, protein, dietary fibers, etc.). In many cases, recipe improvements are made gradually so that consumers can get used to the new recipes and do not find the products less tasty. We pay close attention to taste and quality with every adjustment. For new products, we take the nutritional guidelines into account right from the development stage. Since the introduction of the nutritional guidelines, we have reviewed thousands of recipes. This has enabled us to improve the nutritional profile of hundreds of products.
