Hello garcias79, thank you for your patience. The problem with refreezing defrosted meat is not so much a microbiological one as a sensory one. Double freezing should be avoided, as the ice crystals destroy the cells, which leads to the release of meat juices and impairs the quality of the meat (the meat becomes tough). From a microbiological point of view, nothing will happen as long as the meat is stored in a cool place before and after freezing (i.e. defrosted in the refrigerator).
