We recently rediscovered chicken thigh ragout (exceptionally in the Coop) and chicken thigh steak at a local butcher's for a party.

I only know chicken thigh ragout from my time as a military chef, where we often had chicken thigh ragout on the menu. Unlike chicken breast, the thigh meat does not dry out and is ideal as a ragout or in a curry. We would love it if this was available from you; unfortunately, we have to go to the Coop at the moment.

I only know chicken thigh steak from my cooking apprenticeship, when we always made it on the grill for catering. The guests always loved it because it stays nice and juicy and is a great alternative to grilled red meat. Maybe it's a bit late for this year, but this would be my suggestion for the 2017 barbecue season! :-)
