I've been missing hazelnut/nut paste on the shelves for a few months now (I think it's Patissier brand), ideal for homemade nut croissants. It is also available with almond and pear filling (these two are still available). I have looked in various places in MM and MMM, but I can't find them anywhere. At first I thought delivery problems.... but soooo long?
Does anyone know more?

If they are no longer available, I have a good recipe for you. As a matter of principle, I only make things like this myself (even though I hardly have any free time). That's because you don't have to use a lot of food additives, which only benefit the industrial assembly lines, but don't do us consumers any favors in the long run.

I have also tried the following mixture for a nut croissant filling with chocolate almond twist:
200g ground hazelnuts (or roast whole hazelnuts briefly and then chop in a blitz chopper)
3 tbsp sugar or 1 tbsp stevia
2 tbsp unsweetened cocoa powder (gives a great chocolate note)
1 tsp cinnamon powder
1 egg
milk (enough to make a thick, spreadable mixture).
Good luck! Do it yourself - ready-made products are expensive, overly processed, often contain palm oil and can never match the taste of your own creations. The environment and your health will be happy.
