Hello @juergwaeber A vegetable margarine with palm and rapeseed oil is used to make the puff pastry. Due to its specific properties in terms of sensory properties, functionality and consistency, palm oil is particularly suitable for the production of foodstuffs and cannot be easily replaced by other edible oils. The use of butter instead of palm oil would be possible in this case. However, according to several studies, palm oil is one of the most sustainable fats. Even butter cannot be produced in any quantity without negative consequences. In addition, the market ultimately decides on the use of butter or vegetable fats, such as margarine (customers, costs, demand, etc.). We constantly review our recipes to analyze which fat makes the most sense. This includes technological, ecological and health aspects as well as customer wishes. I also enquired about Farmer @KurtW. The oil is needed for the texture of the bar and to make industrial production possible at all. In the past, coconut oil was used, but this had to be abandoned due to the elimination of trans fatty acids. As a result, we switched to palm oil/fat, which has been used for our standard products in sustainable quality ever since. Unfortunately, not every oil/fat can be used, as special properties of the raw material are required for production. Palm oil is an important raw material for the food industry. We once had the "Butter-Chäschüechli", which were made with butter puff pastry and did not contain palm oil. But the normal Chäschüechli have always contained palm oil.
