Store-baked bread... am I the only one?

Hello everyone,
For a few years now, it's been fashionable to bake bread directly in the store. Is this a plus for the consumer?
I'm not sure. I've noticed that bread is often barely baked, especially braids and Ticino breads. When I press lightly on the bread, it sinks. The inside of the bread looks more like flour than bread. I encounter these problems at Migros, Coop and also at Aldi (only since they also bake bread in-store).
Bread sold in real bakeries doesn't have this problem.
Am I the only one who finds these store-baked loaves inedible?
