Why does it say "delete" next to the entries you make? So anyone can delete them and they disappear.

It's exactly as Istanbul said:
Anyone can delete their own posts. Other people's posts cannot be deleted.
This is one of the features we added at the request of various users - including Maripac, if I'm not mistaken. :-)
