Are there or will there be "light versions" with fewer calories/fat of lactose-free products on the shelves; I'm thinking of yogurts, milk, baked goods, etc.?

That would be great news if lactose-free products could also be made with less sugar/fat. Milk in particular has a very sweet taste...

There are currently no plans in this direction. However, the product range managers are very grateful for such customer feedback and will examine the issue carefully. As the space available in the stores is very limited, it is unfortunately not possible to expand the product ranges at will. Various factors are taken into account when designing the product ranges: customer demand, the development of sales and turnover, the availability of certain raw materials and the manufacturer situation, as well as the availability of comparable products on the market. But what is not yet is still possible. Our specialists are monitoring the issue and are making every effort to offer you the best possible range.

I don't think that's necessary. Light products are always full of I don't know what kind of artificial additives or you simply mix in more of something else as soon as you leave something out. (If you leave out fat, more sugar is often simply added.) It would be important to simply provide a greater variety of lactose-free yogurts in general...
In general, however, the sugar content of foods should be reduced; I agree with you!
Instead of eating light products, you should adjust your diet in general, e.g. simply eat less of something. For example, I simply mix low-fat quark or natural yoghurt into 1/2 a yoghurt pot (e.g. vanilla flavor).
