i finally want a really good herb butter.

up to now there have only been yellowish-green things that taste bad.

i want a herb butter with lots of fresh, coarsely chopped herbs and a little salt, like my mother makes.

it should be a product that doesn't keep forever, but is enjoyed fresh.

i also imagine that there should be a different version depending on the type of meat, fish or vegetables.

I support this idea! At the moment I always buy Bruno's Best herb butter at the Coop. Unfortunately, Migros doesn't sell these products, not even the really good salad dressing....

Here is my mother's recipe:

Mix some butter with a mixer until peaks form, then mix in about the same amount of quark and season with aroma, garlic and onion powder. Chop the parsley, chives and lovage and mix in.

The ratio of butter to quark can be varied according to taste.

You can also use whatever you like for the spices and herbs.

You can also freeze it in portions.

Also great for garlic bread.

If I'm too lazy, I buy the crème fraiche with herbs from Migros and pimp it with fresh herbs. Also very tasty.

The quark makes the herb butter fresher and lighter. It goes perfectly with Gschwelltä or simply on bread. If you like it lighter, you can use more quark. Garlic and onions can of course also be used fresh. I use the powder because I don't like biting into pieces.
