I was surprised to discover today that my favorite bread from Migros (recently???) contains palm oil. Does it have to be? Above all, it is still a "Terra SuisseProduk" One may well assume that the palm oil does not come from a Swiss farmer :)

Please, dear Migros, remove the palm oil from the bread!

And once again I quote the brazen lie of the Migros managers: "We do without palm oil wherever possible..."

What on earth is palm oil doing in bread? When I make bread, I don't need palm oil. Flour, water, yeast, salt.

As far as palm oil is concerned, I was very disappointed by Migros' stupid excuse to 20Minuten. Coop is no better. Both claim that they only source palm oil from sustainable production. What Fastenopfer says, on the other hand, can also be verified by other sources. There is no such thing as "sustainable" production. But the real excuse is this: "Palm oil is three times more productive per hectare" - it's just stupid that these hectares can only be exactly where virgin forest thrives best. Other oil, on the other hand, can also be grown elsewhere where no valuable forest has to be sacrificed. So it's a cheap excuse for convenience and because it's cheaper. Unfortunately, the priceless value of the primeval forest does not appear in the palm oil calculation. In Cambodia, too, some of it is falling victim to the expansion of plantations, as if it were sustainable.

I recently spoke to a person who works in development at a large bakery and is working on replacing palm oil. In such products (breads) it is easily possible to replace palm oil with liquid vegetable oils. For certain puff pastries or Linzertorte, for example, it is more difficult to find a substitute... But Migros could start with the products where it is possible without any problems... this bread is an example!

It works for almost all products without any problems; after all, palm oil was not used anywhere in the past.

In our latitude it has been possible without palm oil for 100,000 years! The thing is that any locally produced oil is certainly 100,000 times more expensive than palm oil :) (which of course is not quite true if you include external costs)

If you didn't burn animal fats, it would work... in the past, people still used lard and co. which at least makes a great cake batter in terms of taste and consistency. But it's not sexy ;)

An alternative to palm oil for vegetarians would be hydrogenated rapeseed oil, which can be produced locally.
