We have the feeling that the cheese quality of various Rezenten cheeses has declined dramatically in the last year. For example, the taste of an Appenzeller Extra can at best be compared to a Surchoix. In our opinion, the storage period is far too short. To stay with Appenzeller, it's worlds apart when we get the cheese from a cheese dairy. We have thrown away various cheeses in the last few weeks because they were not ripe in terms of taste. Ripe cheeses were at most mild or sour in taste. You can tell by looking and smelling at the cheeses that they never correspond to what they are labeled with. We would like to see the cheese quality improve again.
