Especially in summer, I am always annoyed by the fact that many people "feel" the fruit before they buy it (apricots, peaches, etc.).
I see the following options as a solution to the problem:
a) plastic gloves (ok, it's not very ecological, but if you use the existing fruit bags as "gloves", it's much more hygienic....)
b) similar to a fruit market/butcher's shop, a Migros employee should weigh and pack the fruit/vegetables => it would strengthen the customer-employee relationship and it would also be a useful "occupation" for employees no longer working at the checkouts (keyword Subito).
