Holzmichl is a Schwyz cheese that matures in a "cheese cave" near Brunnen.
The review for the creamy semi-hard cheese made from pasteurized milk is waiting in the queue! I bought the hearty cheese with the reddish-brown rind, which has an exceptional flavor (pine), on 14 April, 11 June and 10 September 2015 at Centre Brügg.
Perhaps it was only offered sporadically as it is a regional product!
