Great cheese, discovered by chance: the "Giebelkäse"

I buy a lot of cheese, mostly hard cheese, and about half of it is my favorite, old acquaintances, the other half is still unknown varieties. I'm therefore very happy about the large selection at Migros, especially the range of cheeses from smaller cheese dairies, often presented as "Cheese of the Month", usually "From the region, for the region". This week I bought a cheese to try at Migros in Windisch, it's called "Giebelkäse" and: Wow! I am thrilled! An incredibly well-balanced cheese, wonderfully aromatic, quite mild and yet intense in flavor. Delicious eaten with bread alone, but also very suitable for various combinations. I hope that Giebelkäse will remain in the Migros range for a long time. In any case, I went back to Migros the next day and bought myself a supply. But just that: Please keep it in the range for the long term!
