Just now I wanted to put a little Emmental and Gruyère mixture from the small pack over the lasagne, as I do every Sunday. I opened it about 2 or 3 weeks ago and spread it over 3 Sundays. Expiration date for sale 31.1. Expiry date for consumption 8.2. That would still be a while to accept green mold. But I won't accept it before 8.2. Never happened before, always well sealed and always in the fridge.
Of course, different rules apply when cheese is open. But (I know this from the cheese counter staff) hard cheese can be stored in the fridge for up to 3 weeks. Or even longer. Without setting.
Now someone please explain to me what I have done wrong.
