Now that fall is in full swing and winter is just around the corner, soup vegetables are available again. Already portioned mixed vegetables for soups. You only need to prepare the vegetables and this is also done quickly, as the leeks, for example, are pre-cut.
Couldn't you also offer such portions, especially for pickling?
There are certainly many customers who like to pickle their own meat, be it game, beef or something else.
You could offer a mixture of vegetables (carrots, celery, etc.) and spices (bay leaf, cloves, etc.), similar to those used in Asian cuisine (Fresh Thai Kitchen).
The mixture should be put together in such a way that it is sufficient for 600-700g of meat and you only need to add red wine (approx. 5dl) and red wine vinegar (approx. 1/2-1dl).
This way you can pickle meat quickly and don't have to think of anything for cut vegetables, e.g. celery. I usually think of something, but the cut vegetables are quickly forgotten and have to be poured!
