Because many people want everything until closing time. If we as customers didn't want everything at all times, it wouldn't exist...
That really shocks me too. They once reported on this problem in Kassensturz. One of the big distributors' arguments is that it is cheaper to throw away all the food that is still edible than to distribute it. Food would have to be collected from the stores, transported, sorted and finally distributed. This is very time-consuming and expensive, but there are "associations" and institutions that do this.
