What do I have to set so that it doesn't delete the checked products in my shopping list while I'm shopping?

@Pfuepf: it shouldn't actually delete them! However, if you are in "Open" mode and then check them off, they disappear to "Done"! If you are in "All" mode and check the box, the products will turn gray and stay in place! So if you have checked everything off in Open mode but want to check again whether something has been checked off by mistake that is not yet in the cart, you can simply go through the list under Completed or All! To delete the list or individual products you have to press the button with the arrow in the rectangle at the top right where you get a selection of options!
