Hello PrincessErika, Cream is a mixture (emulsion) of fat and water. Without the addition of thickening agents, the milk fat would separate from the water over time. Carrageenan or E407 is a vegetable thickening agent extracted from red algae. Its purpose is to keep cream whippable despite its long shelf life. Cream without thickening agents is found in pasteurized products with a shorter shelf life. From a health point of view, E407 is risk-free. Carrageenan is a dietary fiber that is not assimilated by the body. We hope you find this information useful. Best regards, Sina
