Why do I have to be annoyed every time by their "bread chafers"?

In 100 years I won't understand why bread that is obviously fresh and still warm (open bakery in the background) still has to be extensively chafed every time and by almost every woman/man, only to be put back and another loaf (if any!) ends up in the trolley.
There are specialists who even have to paw the freshly wrapped Züpfen in front of their eyes.
Which doesn't mean that it is allowed to touch bread that is not obviously freshly packed?

It just really annoys me, and I sometimes go straight up to people and ask them if it's really necessary. But I think that would be a matter for the Migros staff, but they'd probably rather watch the hustle and bustle.

In the age of App'itis Akutis, THAT would be an app that tells people that the bread has to be fresh and crispy. Because the obvious probably no longer gets through to most cell phone radiation-damaged brainiacs...?
