This is not the brown sugar. As I said before, the Swiss wholesalers are missing out... brown sugar is raw sugar with a fairly high proportion of molasses. Cane sugar is brown in color, as is candy sugar, but it has nothing to do with brown sugar. Brown sugar is raw sugar. In other words, cane sugar or sugar from beets. It is crushed, boiled, pressed and the resulting syrup is dried and thus becomes crystalline. The taste and consistency of the baked goods/dishes cannot be achieved with our familiar "normal" sugars.
